12ga(bore) is the way to go.

An over-under is the classic choice for clay shooting. One with a single-selective trigger and choke tubes (as opposed to fixed chokes) is a good idea.

You don't want to fire both barrel together, ever. The point of an over under is to have two seperate shots.

The set-up depends on the sport you're shooting. Skeet/sporting clays and trap are totally different. If you're shooting trap primarily, find a trap gun with long barrels and a straight or Monte-Carlo stock. It will work fine for skeet/sporting as long as you can change the chokes. If you're just shooting skeet/sporting clays any skeet, sporting, or field gun will work just fine.

For ammunition a "light target load" works for clays. This is 1 1/8oz (32grams I think) of shot. Sizes for clays are either 7 1/2, 8, 8 1/2, or 9 shot. 1145fps is the velocity. It'll break clays well and won't beat you up.

I would suggest individual guns but I'm not quite sure whats available accross the pond.

Assuming that you are buying one gun for both hunting and clay target shooting the over and under would be the way to go. Get one with choke tubes so that you can change choke constriction in the barrels for the type of shooting you are doing at the time. Get a gun with a single selective trigger as a double trigger gun will be much more difficult to use in shooting doubles in target shooting. If the gun fires both barrels at the same time it is defective. Any double should only fire one barrel at a time. I would suggest a 12 bore as they are an all around gun. If you want less recoil you can always use lighter loads in it. However if you go to a smaller bore it will be impossible to use the loads necessary in hunting, especially if you are to hunt waterfowl. Good luck and good shooting.

Yes you can shot both barrels at a time with some that have two triggers but that is usually and I think always side by side shot guns. For what you are doing though you will want to look at over and under shotguns, the ducks nuts seems to be the Browning Cynergy http://www.browningint.com/intro.html?totalBytes=282540&loadedBytes=50145&remainingBytes=232395&percentDone=17 VERY costly around $3-4,000 US and you can now get some in pink (hopefully for the ladies) but for a good starter grab a well looked after second hand Berreta.

I totally agree with dragon on the type. An over/under is the way to go. You can spend anywhere from $200-$5,000 US on one. Shop around. In Europe, there are many manufacturers. Beretta makes some very nice and affordable guns. Just remember, you may spend a little over your target budget but you will get what you pay for. A quality gun will be around for your grand kids to enjoy unless your Gov. takes them all. I have a Belgium made Browning O/U that my father bought used from a man in Florida in the 60's. The man said he bought it from Paul Tibbets (see atom bomb) who purchased it at a military exchange in Spain. I don't know if that part is true but the shotgun is an unadorned Browning with beautiful checkered stocks. The gun looks almost new although no one can guess how many rounds have been put through it or how many pheasant have been dropped. I have not kids, but I will no doubt find someone worthy to leave it to.

Hope you are able to find something that brings you years of pleasure.

This is my two pence worth from a fellow Brit.

You have a choice of three, Single barrel semi auto, over and under or side by side. Then there is the gauge/bore either a 20 or 12.
As your new to the sport I would either go for a 3 shot semi auto as they have less recoil and can be picked up 2nd hand for reasonable money. Webley & Scott do one for less than £400 new and Escort knock one out at about £300.
An over and under would be my next choice for you. Lanber and Bettinsoli are not too badly priced.
If you've got the cash you can't go wrong in a Beretta 686 or Browning 525 both guns will hold their value.
Forget about the side by side it's not really a big clay circuit gun in the UK. There is a SxS championship but thats for later!!
