Himalayan Snowcock. They are originally from Asia, about the size of a smallish turkey, and are related to Chukars They live on top of mountains above 9,000 feet, are very cautious and extremely good flyers. They are so hard to bag that there are people who have hunted them for years and never bagged one. Nevada has a hunting season for them.
Probably Grouse (for me) because they are so damn fast and sometimes lay low and startle you when they take off. Of course this is different if you are hunting over a dog. For your shotgun 6 or 7 1/2 shot should be fine on the birds you mentioned. Check local laws, some places require non lead shot!
For me so far would be HUGE black crows. Gosh those things are so tough. Some times they’ll keep going after taking on regular 7 or 8 # birdshot. So for bigger birds I would go with some heavy geese 3 or 3 1/2 inch shells.
Grouse… Things are so fast, and sometimes lay so damn low!! you litterly walk on the things sometimes, and if your not really, and i mean really ready, it’ll scare the crap outa you, and by the time you realize what it is, it’s already 40+ yards away
Oh and for the crow hunter dude… Use a better camo pattern and some bigger shot!! I can get crows to come into me to about 15 yards… and i put the wollap on them with using a combo handloaded shells that contain #4 and #6 birdshot… I’ve already laid down the law at 50 yards with a modified 2 3/4" 12ga on a crow!!.. But than again i ALWAYS use high brass..which helps
The hardest not to shoot right away bird for me is geese… When i’m laying down in the blind, calling,, here comes the flock… 70 yards… 60 yards…. 50 yards….40 yards….30 yards… Oh crap their still flying in… have to wait for the landing gears to come out… 25 yards… CRAP!! I just wanta fling the blind open when their about 40 yards out!!

As far as most power to kill, I would say a sand hill crane. Hard to seek up on, I would say turkey. Hard to get a bead on, I would say dove.
